All our Whiting are locally caught off the shores of Cornwall, the Celtic Sea and the Western Channel. None are sourced from fishing areas where stocks are low such as the North Sea, Eastern Channel or Irish Sea.

Whiting can be bought whole but it is usually sold as fillets, this is because they are small and fiddly to prepare. The flesh has a light texture and delicate flavour which works well with wine-based or cider-based sauces.
